Toge Goreng

Toge Goreng or fried toge is also known as Taoge Tauco because the ingredients include oncom sauce with tauco – a typical ingredient widely used by Sundanese. Toge Goreng can easily be found in South and East Jakarta, which border West Java. As time goes by, fried toge is widely spread throughout Betawi cultural region, as many sellers and peddlers are offering this dish.

Ingredients:

  • taoge
  • oncom
  • yellow tofu
  • chives

Sauce:

  • tomato
  • tauco kuning
  • oncom
  • leek
  • soy sauce
  • lime
  • cooking oil

Ground Spices:

  • red chili
  • red onion
  • sugar and salt

How to Make:

  • Sauté spices in the oil until fragrant.
  • Add tomatoes, oncom and leeks in the sautéed seasoning, then stir until evenly mixed.
  • Add water, soy sauce and tauco to the mixture
  • Prepare boiled or steamed noodles, bean sprouts, oncom, and chives. Then, pour the sauce above them.
  • Add cayenne pepper can be added if you like it spicy.
