Dodol

Dodol is a sticky snack made from sugar and sticky rice. It is usually served during wedding ceremony as it is often used as a symbol of attachment and faithfulness. It is wished that the bride and groom always stick to each other and get along until the end.

The process of making dodol requires a lot of patience and takes a lot of time. Consequently, some Betawi people are reluctant to make dodol themselves. This makes it difficult to find dodol in Jakarta. However, today it can still be found in certain areas, such as Condet and Srengseng Sawah.

Dodol variant can be a combination of black sticky rice or white sticky rice. Flavorings can include durian, srikaya and others to strengthen the taste and aroma.

Ingredients:

  • glutinous rice
  • coconut milk
  • brown sugar
  • water

How to make:

  • Mix the ingredients in cauldron. Cook it on high heat.
  • Stir the mixture continuously for 7-8 hours until it thickens.
  • Lower the heat if the mixture is already sticky and thickened.
